Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, mix together the panko breadcrumbs, almond flour, garlic powder, paprika, salt, and black pepper.
  3. Dip each zucchini stick into the olive oil and then coat it in the breadcrumb mixture. Place the zucchini sticks on the prepared baking sheet.
