Total time: 35 minutes
Yields: 4 servings

Ingredients:

  • 200g asparagus, trimmed and cut into 1-inch pieces
  • 150g smoked salmon, flaked
  • 8 large eggs
  • 80ml milk
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional garnish: fresh dill, sliced cherry tomatoes.

Ingredient Substitutions:

  • Asparagus can be substituted with broccoli or zucchini.
  • Smoked salmon can be replaced with cooked bacon or ham.
  • Dried dill can be substituted with fresh dill (use 1 tablespoon).

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Blanch the asparagus: Bring a pot of salted water to a boil.
  3. Add the asparagus and cook for 2 minutes. Drain and transfer to an ice bath to stop the cooking process. Drain again and set aside.
  4. In a large bowl, whisk together the eggs, milk, dried dill, garlic powder, salt, and black pepper.
  5. Heat an oven-safe skillet over medium heat and add the olive oil.
  6. Add the blanched asparagus to the skillet and sauté for 2 minutes.
  7. Pour the egg mixture into the skillet, making sure the asparagus is evenly distributed.
  8. Sprinkle the flaked smoked salmon over the top.
  9. Cook for 3-4 minutes, gently lifting the edges of the frittata to allow the uncooked egg to flow underneath.
  10. Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the frittata is set in the center and lightly golden on top.
  11. Remove from the oven and let it cool for a few minutes.
  12. Garnish with fresh dill and sliced cherry tomatoes if desired.
  13. Cut into wedges and serve warm.

Storage:

Leftover frittata can be stored in an airtight container in the refrigerator for up to 3 days.
Reheat gently in the microwave or enjoy it cold.

Recipe Variations:

  • Incorporate diced bell peppers or onions for added flavor and texture.
  • Swap the smoked salmon with cooked shrimp or sautéed mushrooms for a different twist.
  • Add a sprinkle of grated cheese, such as Parmesan or cheddar, on top before baking for extra richness.

The Smoked Salmon and Asparagus Frittata is a fantastic choice for a flavorful and impressive brunch. This dish combines the natural freshness of asparagus with the smoky richness of salmon, creating a harmonious blend of flavors.
Whether you're hosting a gathering or treating yourself, this frittata will surely satisfy your brunch cravings.
